Halloumi is a semi-firm cheese from Cyprus, high in protein and calcium. Its springy texture lets it be seared in a pan or on the grill without melting, making it an excellent protein substitute for vegetarian dishes. Naturally salty, it contains more sodium than most fresh cheeses—rinse or briefly soak to reduce saltiness. Serve grilled slices in salads, sandwiches, bowls, skewers, or as a topping for roasted vegetables. Pairs well with lemon, fresh herbs, honey, spices, and summer vegetables.
